Lion’s Mane
Lion’s Mane (Hericium Erinaceus) is a culinary and medicinal mushroom. This mushroom is frequently used as a seafood alternative in vegetarian cuisine and has a flavor reminiscent of shrimp or lobster. It is native to North America, Europe, and Asia and is a member of the tooth fungus family. Lion’s Mane often has a “brain-like” appearance, and is known for support of cognitive function.
Oyster
Oyster Mushrooms (Pleurotus Ostreatus) are a popular culinary mushroom. They can be found in a number of different varieties including Blue, Black, Gold, Pink, White, and more. This mushroom has an extremely versatile flavor profile and thus is commonly featured in a wide variety of dishes. Oyster Mushrooms are a tasty addition to dinner plates around the world and are increasingly celebrated for their pollution fighting capabilities!

Black Poplar - Pioppino
Black Poplar (Agrocybe Aegerita) Mushrooms, also known by the name “Pioppino”, are typically found growing in clusters on Black Poplar trees. They are a culinary mushroom, often used in soups and pasta dishes, with a flavor described as “nutty” or “earthy”.

Cordyceps
Cordyceps (Cordyceps Militaris) are a unique mushroom in that they are found in nature parasitizing on insects. Fortunately, pioneers in Mycology have developed techniques for indoor cultivation without the use of insect hosts. They are a medicinal mushroom with a vast array of health benefits.

Reishi
Reishi(Ganoderma lucidum is a medicinal mushroom and is not preferred for culinary pursuits due to its hard and woody texture. This mushroom is known by the Chinese as the “mushroom of immortality” and has been used in traditional Chinese medicine for thousands of years.
ShiItake
Shiitake mushrooms contain eritadenine, a compound known to reduce cholesterol levels in the blood. They also contain beta-glucans that reduce inflammation and help prevent the intestines from absorbing cholesterol.
